Ingredients:
- 1 cup (240 ml) mixed berries (strawberries, raspberries, blueberries), fresh or frozen (thawed)
- 2 tablespoons (30 ml) granulated sugar
- 1 cup (240 ml) heavy cream (double cream), chilled
- 1 teaspoon (5 ml) vanilla extract
- 4 meringue nests, roughly crushed
- Optional: fresh mint leaves, for garnish
Instructions:
- Gently combine the berries and sugar in a bowl. Let them sit for a few minutes to release their juices.
- In a separate bowl, whip the heavy cream with the vanilla extract until soft peaks form. Don't overwhip!
- Layer the macerated berries, crushed meringue nests, and whipped cream in serving glasses or bowls. Repeat layers.
- Garnish with fresh mint leaves, if desired. Chill for a few minutes to allow the flavors to meld.
