Ingredients:

  • 1 cup (240 ml) mixed berries (strawberries, raspberries, blueberries), fresh or frozen (thawed)
  • 2 tablespoons (30 ml) granulated sugar
  • 1 cup (240 ml) heavy cream (double cream), chilled
  • 1 teaspoon (5 ml) vanilla extract
  • 4 meringue nests, roughly crushed
  • Optional: fresh mint leaves, for garnish

Instructions:

  1. Gently combine the berries and sugar in a bowl. Let them sit for a few minutes to release their juices.
  2. In a separate bowl, whip the heavy cream with the vanilla extract until soft peaks form. Don't overwhip!
  3. Layer the macerated berries, crushed meringue nests, and whipped cream in serving glasses or bowls. Repeat layers.
  4. Garnish with fresh mint leaves, if desired. Chill for a few minutes to allow the flavors to meld.
