Ingredients:

  • 1 cup (160 g) sweetcorn, fresh or thawed and drained
  • 1/2 cup (65 g) all-purpose flour
  • 1 large egg (50 g), beaten
  • 2 tablespoons (30 ml) milk or buttermilk
  • 1 teaspoon (5 g) baking powder
  • 1/4 teaspoon (1.5 g) salt
  • 1/4 teaspoon (1 g) black pepper
  • 2 tablespoons (15 g) spring onions, finely sliced
  • 1/4 cup (28 g) sharp cheddar cheese, shredded
  • 1/2 teaspoon (2 g) smoked paprika
  • 1 tablespoon (15 ml) neutral oil, for spraying

Instructions:

  1. In a medium bowl, whisk together the flour, baking powder, smoked paprika, salt, and black pepper.
  2. Stir in the beaten egg and milk or buttermilk until a thick, cohesive paste forms.
  3. Fold in the sweetcorn, sliced spring onions, and shredded cheddar cheese until evenly distributed.
  4. Cut perforated parchment paper to fit the air fryer basket. Spoon approximately 2 tablespoons of batter per fritter onto the parchment and gently flatten each into a disk about 1/2 inch thick.
  5. Preheat the air fryer to 375°F (190°C). Lightly spray the tops of the fritters with neutral oil.
  6. Air fry for 7 to 8 minutes, then carefully flip the fritters. Spray the other side with oil and cook for another 5 to 7 minutes, until golden brown and firm in the centers.
