Ingredients:
- 1 cup (160 g) sweetcorn, fresh or thawed and drained
- 1/2 cup (65 g) all-purpose flour
- 1 large egg (50 g), beaten
- 2 tablespoons (30 ml) milk or buttermilk
- 1 teaspoon (5 g) baking powder
- 1/4 teaspoon (1.5 g) salt
- 1/4 teaspoon (1 g) black pepper
- 2 tablespoons (15 g) spring onions, finely sliced
- 1/4 cup (28 g) sharp cheddar cheese, shredded
- 1/2 teaspoon (2 g) smoked paprika
- 1 tablespoon (15 ml) neutral oil, for spraying
Instructions:
- In a medium bowl, whisk together the flour, baking powder, smoked paprika, salt, and black pepper.
- Stir in the beaten egg and milk or buttermilk until a thick, cohesive paste forms.
- Fold in the sweetcorn, sliced spring onions, and shredded cheddar cheese until evenly distributed.
- Cut perforated parchment paper to fit the air fryer basket. Spoon approximately 2 tablespoons of batter per fritter onto the parchment and gently flatten each into a disk about 1/2 inch thick.
- Preheat the air fryer to 375°F (190°C). Lightly spray the tops of the fritters with neutral oil.
- Air fry for 7 to 8 minutes, then carefully flip the fritters. Spray the other side with oil and cook for another 5 to 7 minutes, until golden brown and firm in the centers.
