Ingredients:
- 1.5 lbs (approx. 700g) Yukon Gold or Russet Potatoes, peeled and cut into 1-inch (2.5cm) cubes
- 2 tablespoons Olive Oil (plus extra for drizzling, if desired)
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Dried Rosemary, crushed (or 1 tablespoon fresh, chopped)
- 1/2 teaspoon Dried Thyme (or 1 teaspoon fresh, chopped)
- 1/2 teaspoon Paprika (Smoked paprika adds a nice touch!)
- 1/4 teaspoon Salt (or to taste)
- 1/4 teaspoon Black Pepper (freshly ground, to taste)
- Optional: Fresh Parsley, chopped, for garnish
Instructions:
- Peel and cut the potatoes into roughly 1-inch cubes. Ensure they are relatively uniform in size for even cooking.
- In a large bowl, toss the potato cubes with olive oil, garlic powder, onion powder, rosemary, thyme, paprika, salt, and pepper. Make sure the potatoes are evenly coated with the seasoning.
- Preheat your air fryer to 400°F (200°C) for a couple minutes. Note: check your manufacturer's instructions for preheating times
- Place the seasoned potatoes in the air fryer basket in a single layer, ensuring not to overcrowd. You may need to cook in batches.
- Air fry for 20-25 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the outside and tender on the inside. Check for doneness by piercing with a fork – it should slide in easily.
- Remove the potatoes from the air fryer, garnish with fresh parsley (if desired), and serve immediately.
