Ingredients:

  • 1.5 lbs (approx. 700g) Yukon Gold or Russet Potatoes, peeled and cut into 1-inch (2.5cm) cubes
  • 2 tablespoons Olive Oil (plus extra for drizzling, if desired)
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Rosemary, crushed (or 1 tablespoon fresh, chopped)
  • 1/2 teaspoon Dried Thyme (or 1 teaspoon fresh, chopped)
  • 1/2 teaspoon Paprika (Smoked paprika adds a nice touch!)
  • 1/4 teaspoon Salt (or to taste)
  • 1/4 teaspoon Black Pepper (freshly ground, to taste)
  • Optional: Fresh Parsley, chopped, for garnish

Instructions:

  1. Peel and cut the potatoes into roughly 1-inch cubes. Ensure they are relatively uniform in size for even cooking.
  2. In a large bowl, toss the potato cubes with olive oil, garlic powder, onion powder, rosemary, thyme, paprika, salt, and pepper. Make sure the potatoes are evenly coated with the seasoning.
  3. Preheat your air fryer to 400°F (200°C) for a couple minutes. Note: check your manufacturer's instructions for preheating times
  4. Place the seasoned potatoes in the air fryer basket in a single layer, ensuring not to overcrowd. You may need to cook in batches.
  5. Air fry for 20-25 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the outside and tender on the inside. Check for doneness by piercing with a fork – it should slide in easily.
  6. Remove the potatoes from the air fryer, garnish with fresh parsley (if desired), and serve immediately.
