Ingredients:

  • 1.5 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 0.5 tsp (2g) baking powder
  • 0.5 tsp (3g) salt
  • 1 tbsp (6g) ground cinnamon
  • 1 tsp (2g) ground ginger
  • 0.25 tsp (1g) ground nutmeg
  • 2 large (100g) eggs
  • 0.5 cup (115g) coconut oil
  • 0.75 cup (150g) brown sugar
  • 1 tsp (5ml) vanilla extract
  • 1 cup (110g) grated carrots
  • 1 cup (120g) grated Granny Smith apple
  • 0.5 cup (60g) chopped walnuts

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
  2. Grate carrots and Granny Smith apples using the medium holes of a box grater; keep all natural juices.
  3. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg until no clumps remain.
  4. In a separate bowl, whisk together eggs, melted coconut oil, brown sugar, and vanilla extract.
  5. Fold the wet ingredients into the dry ingredients until just combined.
  6. Gently stir in the grated carrots, grated apples, and chopped walnuts.
  7. Pour the batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 55–65 minutes until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack.
