Ingredients:
- 1.5 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 0.5 tsp (2g) baking powder
- 0.5 tsp (3g) salt
- 1 tbsp (6g) ground cinnamon
- 1 tsp (2g) ground ginger
- 0.25 tsp (1g) ground nutmeg
- 2 large (100g) eggs
- 0.5 cup (115g) coconut oil
- 0.75 cup (150g) brown sugar
- 1 tsp (5ml) vanilla extract
- 1 cup (110g) grated carrots
- 1 cup (120g) grated Granny Smith apple
- 0.5 cup (60g) chopped walnuts
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
- Grate carrots and Granny Smith apples using the medium holes of a box grater; keep all natural juices.
- In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg until no clumps remain.
- In a separate bowl, whisk together eggs, melted coconut oil, brown sugar, and vanilla extract.
- Fold the wet ingredients into the dry ingredients until just combined.
- Gently stir in the grated carrots, grated apples, and chopped walnuts.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 55–65 minutes until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack.
