Ingredients:

  • 2 cups (250g) all-purpose flour
  • 3/4 cup (150g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) baking soda
  • 1 tsp (2g) ground cinnamon
  • 1/2 tsp (3g) salt
  • 3/4 cup (180g) sour cream
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 2 large (100g) eggs
  • 1 tsp (5ml) vanilla extract
  • 1 cup (150g) apple, finely diced
  • 1 cup (120g) fresh cranberries, halved
  • 1 tbsp (8g) all-purpose flour

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line the bottom with parchment paper.
  2. In a small bowl, toss the diced apples and cranberries with 1 tablespoon of flour until lightly coated.
  3. In a large mixing bowl, whisk together the 2 cups of flour, sugar, baking powder, baking soda, cinnamon, and salt.
  4. In a separate medium bowl, whisk together the melted butter, sour cream, eggs, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and fold using a silicone spatula until just combined.
  6. Gently fold in the floured apple and cranberry mix-ins.
  7. Pour batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the bread in the pan for 10 minutes before transferring to a wire rack to cool completely.
