Ingredients:
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) baking soda
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (3g) salt
- 3/4 cup (180g) sour cream
- 1/2 cup (115g) unsalted butter, melted and cooled
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- 1 cup (150g) apple, finely diced
- 1 cup (120g) fresh cranberries, halved
- 1 tbsp (8g) all-purpose flour
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line the bottom with parchment paper.
- In a small bowl, toss the diced apples and cranberries with 1 tablespoon of flour until lightly coated.
- In a large mixing bowl, whisk together the 2 cups of flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In a separate medium bowl, whisk together the melted butter, sour cream, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and fold using a silicone spatula until just combined.
- Gently fold in the floured apple and cranberry mix-ins.
- Pour batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the bread in the pan for 10 minutes before transferring to a wire rack to cool completely.
