Ingredients:

  • 1/2 cup (120 ml) fresh orange juice
  • 1/4 cup (60 ml) fresh lime juice
  • 1/4 cup (60 ml) olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • Optional: 1/4 cup (15 g) chopped fresh cilantro

Instructions:

  1. In a mixing bowl, whisk together the orange juice, lime juice, olive oil, minced garlic, soy sauce, and apple cider vinegar.
  2. Add in the ground cumin, chili powder, smoked paprika, black pepper, and salt; mix until well combined.
  3. For an extra punch of flavor, stir in the chopped fresh cilantro.
  4. Place your choice of meat in a sealable bag or shallow dish and pour the marinade over it. Ensure the meat is well-coated.
  5. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to overnight for maximum flavor.
  6. Grill or pan-sear the marinated meat until cooked to your preferred doneness (about 4-5 minutes per side for steaks), ensuring internal temperature reaches 145°F (63°C) for beef.
