Ingredients:

  • 4 cloves garlic, minced into a fine paste
  • 1 small shallot, finely diced
  • 0.5 cup red wine vinegar
  • 1 tsp kosher salt
  • 1 cup packed flat-leaf Italian parsley, stems removed and finely chopped
  • 0.5 bunch fresh cilantro, finely chopped
  • 1 tbsp dried oregano
  • 0.5 tsp crushed red pepper flakes
  • 0.5 cup high-quality extra virgin olive oil
  • 0.5 tsp freshly cracked black pepper

Instructions:

  1. In a small glass bowl, combine the minced garlic, finely diced shallot, red wine vinegar, and kosher salt. Let the mixture macerate for at least 10 minutes to soften the raw aromatics.
  2. Thoroughly wash and dry the parsley and cilantro. Using a sharp chef's knife, finely chop the herbs using a rocking motion until they are fine specks, avoiding a paste-like consistency.
  3. Transfer the vinegar and aromatic mixture into a small glass bowl. Add the chopped herbs, dried oregano, red pepper flakes, extra virgin olive oil, and black pepper. Stir or shake to combine. Allow to rest for 30 minutes before serving for optimal flavor development.
