Ingredients:

  • 1 cup fresh cilantro leaves, tightly packed
  • ½ cup fresh parsley leaves, tightly packed
  • ½ cup red onion, finely chopped
  • 3-4 cloves garlic, minced
  • 1-2 Scotch bonnet peppers, seeds removed and finely chopped
  • ¼ cup lime juice (about 2 limes)
  • ½ cup vegetable oil
  • 2 tsp soy sauce
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 1 tsp sugar (optional)

Instructions:

  1. Gather all ingredients and chop the herbs and peppers as needed.
  2. In a food processor, add cilantro, parsley, red onion, garlic, and Scotch bonnet peppers.
  3. Pour in lime juice and vegetable oil into the processor.
  4. Add soy sauce, ground black pepper, salt, and optional sugar to the mixture.
  5. Pulse until smooth, stopping to scrape down the sides as needed. Adjust seasoning if necessary.
  6. Check for balance in flavor, adding more salt or sugar if desired.
  7. Transfer the wet wet sauce to an airtight container and let it sit in the fridge for at least an hour for flavors to meld.
