Ingredients:
- 1 cup fresh cilantro leaves, tightly packed
- ½ cup fresh parsley leaves, tightly packed
- ½ cup red onion, finely chopped
- 3-4 cloves garlic, minced
- 1-2 Scotch bonnet peppers, seeds removed and finely chopped
- ¼ cup lime juice (about 2 limes)
- ½ cup vegetable oil
- 2 tsp soy sauce
- 1 tsp ground black pepper
- 1 tsp salt
- 1 tsp sugar (optional)
Instructions:
- Gather all ingredients and chop the herbs and peppers as needed.
- In a food processor, add cilantro, parsley, red onion, garlic, and Scotch bonnet peppers.
- Pour in lime juice and vegetable oil into the processor.
- Add soy sauce, ground black pepper, salt, and optional sugar to the mixture.
- Pulse until smooth, stopping to scrape down the sides as needed. Adjust seasoning if necessary.
- Check for balance in flavor, adding more salt or sugar if desired.
- Transfer the wet wet sauce to an airtight container and let it sit in the fridge for at least an hour for flavors to meld.
