Ingredients:

  • 1 cup mashed overripe bananas (about 2 medium bananas)
  • 1/2 cup granulated sugar
  • 1/4 cup melted unsalted butter (or coconut oil)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or walnuts (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the mashed bananas, sugar, melted butter, egg, and vanilla extract. Whisk until smooth.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt until thoroughly mixed.
  4. Gradually fold the dry ingredients into the wet mixture using a rubber spatula until just combined.
  5. If using, gently fold in chocolate chips or walnuts.
  6. Use a tablespoon or cookie scoop to drop dough onto a prepared baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 12-15 minutes until the edges are set and the tops appear cracked.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
