- 1 cup mashed overripe bananas (about 2 medium bananas)
- 1/2 cup granulated sugar
- 1/4 cup melted unsalted butter (or coconut oil)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips or walnuts (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the mashed bananas, sugar, melted butter, egg, and vanilla extract. Whisk until smooth.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt until thoroughly mixed.
- Gradually fold the dry ingredients into the wet mixture using a rubber spatula until just combined.
- If using, gently fold in chocolate chips or walnuts.
- Use a tablespoon or cookie scoop to drop dough onto a prepared baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes until the edges are set and the tops appear cracked.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
