Ingredients:

  • 4 large russet potatoes (about 2 pounds / 900g)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon salt (5g)
  • 1/2 teaspoon black pepper (2g)
  • 1 teaspoon garlic powder (3g)
  • 1 cup cooked boba pearls (about 150g)
  • 1/4 cup brown sugar (50g)
  • 1/2 cup water (120ml)
  • 2 tablespoons unsalted butter (30g)
  • 2 tablespoons all-purpose flour (15g)
  • 1 cup milk (240ml)
  • 1 1/2 cups shredded cheddar cheese (about 170g)
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • Chopped green onions, for garnish
  • Sour cream or hot sauce, for serving (optional)

Instructions:

  1. Preheat the oven to 425°F (220°C). Wash and cut potatoes into fries. Toss fries with olive oil, salt, pepper, and garlic powder. Spread fries in a single layer on a baking sheet.
  2. Bake in preheated oven for 25-30 minutes, flipping halfway, until golden brown and crispy.
  3. In a medium pot, bring water to a boil; add cooked boba and simmer for 5 minutes. Drain boba and toss with brown sugar for flavor.
  4. In a saucepan, melt butter over medium heat. Stir in flour for 1-2 minutes to create a roux. Gradually whisk in milk until smooth; bring to a simmer.
  5. Stir in shredded cheese until melted and smooth. Add cayenne if desired.
  6. Remove fries from the oven; layer boba over the fries. Drizzle cheese sauce generously over the top.
  7. Top with green onions; serve with sour cream or hot sauce if desired.
