Ingredients:
- 4 large russet potatoes (about 2 pounds / 900g)
- 2 tablespoons olive oil (30ml)
- 1 teaspoon salt (5g)
- 1/2 teaspoon black pepper (2g)
- 1 teaspoon garlic powder (3g)
- 1 cup cooked boba pearls (about 150g)
- 1/4 cup brown sugar (50g)
- 1/2 cup water (120ml)
- 2 tablespoons unsalted butter (30g)
- 2 tablespoons all-purpose flour (15g)
- 1 cup milk (240ml)
- 1 1/2 cups shredded cheddar cheese (about 170g)
- 1/2 teaspoon cayenne pepper (optional, for heat)
- Chopped green onions, for garnish
- Sour cream or hot sauce, for serving (optional)
Instructions:
- Preheat the oven to 425°F (220°C). Wash and cut potatoes into fries. Toss fries with olive oil, salt, pepper, and garlic powder. Spread fries in a single layer on a baking sheet.
- Bake in preheated oven for 25-30 minutes, flipping halfway, until golden brown and crispy.
- In a medium pot, bring water to a boil; add cooked boba and simmer for 5 minutes. Drain boba and toss with brown sugar for flavor.
- In a saucepan, melt butter over medium heat. Stir in flour for 1-2 minutes to create a roux. Gradually whisk in milk until smooth; bring to a simmer.
- Stir in shredded cheese until melted and smooth. Add cayenne if desired.
- Remove fries from the oven; layer boba over the fries. Drizzle cheese sauce generously over the top.
- Top with green onions; serve with sour cream or hot sauce if desired.
