Ingredients:
- 2 lbs russet potatoes, cut into fries
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 tbsp cornstarch
- 1/4 cup heavy cream
- 1/2 cup boba pearls, cooked as per package instructions
- 1/2 tsp salt
- Chopped green onions for garnish (optional)
Instructions:
- Soak boba pearls in water for 30 minutes, then cook according to package instructions and drain.
- Preheat oven to 425°F (220°C). Toss cut potatoes with olive oil, salt, pepper, garlic powder, and paprika.
- Spread fries on a baking sheet lined with parchment paper in a single layer.
- Bake fries in the preheated oven for 30 minutes, flipping halfway through, until golden and crispy.
- In a saucepan, heat milk over medium heat until steaming but not boiling. Whisk in cornstarch to thicken, followed by heavy cream, salt, and shredded cheese until smooth.
- Stir in cooked boba pearls gently until well combined.
- Once fries are cooked, transfer to a serving plate and pour cheesy boba topping generously over them. Garnish with chopped green onions, if desired.
