Ingredients:

  • 1 1/4 cups (160g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (115g) unsalted butter, chilled and cubed
  • 1/4 cup (60ml) ice water
  • 2 cups (300g) fresh or frozen Goumi Berries
  • 1/2 cup (100g) granulated sugar
  • 2 tablespoons (15g) cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1 egg (for egg wash)
  • 1 tablespoon (15ml) milk

Instructions:

  1. In a bowl, combine flour, salt, and sugar.
  2. Cut in chilled butter until mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until dough comes together.
  4. Shape into a disc, wrap in plastic, and chill for 30 minutes.
  5. In a mixing bowl, combine Goumi Berries, sugar, cornstarch, lemon juice, vanilla extract, and cinnamon. Toss gently to coat.
  6. On a floured surface, roll out the chilled dough to fit the pie dish.
  7. Transfer to the pie dish, pressing into the bottom and sides.
  8. Pour the berry filling into the prepared crust, spreading it evenly.
  9. Roll out remaining dough for the top layer. Cut into strips for a lattice, or roll out completely and cut slits for steam.
  10. Brush the top with a mixture of beaten egg and milk.
  11. Bake in a preheated oven at 375°F (190°C) for 45 minutes or until the crust is golden brown and the filling is bubbly.
  12. Allow pie to cool for at least 30 minutes before slicing.
