Ingredients:
- 1 ½ cups (190 g) all-purpose flour
- ½ teaspoon salt
- ½ cup (113 g) unsalted butter, chilled and cubed
- 3 to 4 tablespoons (45-60 mL) ice water
- 2 cups (300 g) fresh goumi berries (or frozen, thawed)
- ½ cup (100 g) granulated sugar (adjust to taste)
- 2 tablespoons (30 g) cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- ½ teaspoon cinnamon (optional)
Instructions:
- In a mixing bowl, combine flour and salt.
- Cut in the chilled butter until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing until a dough forms.
- Shape into a disc, wrap in plastic, and chill for at least 30 minutes.
- In a mixing bowl, add goumi berries, sugar, cornstarch, vanilla extract, lemon juice, and cinnamon.
- Stir gently to coat the berries evenly and set aside.
- Preheat the oven to 375°F (190°C).
- Roll out the chilled dough on a floured surface to fit the pie dish.
- Transfer the dough to the pie dish, trimming excess.
- Pour the berry mixture into the crust.
- Roll out a second piece of dough for the top crust or make a lattice top.
- Cut slits for steam vents if using a solid top.
- Bake in preheated oven for 45 minutes or until golden and bubbly.
- Cool for at least 20 minutes before slicing.
