Ingredients:

  • 1 ½ cups (190 g) all-purpose flour
  • ½ teaspoon salt
  • ½ cup (113 g) unsalted butter, chilled and cubed
  • 3 to 4 tablespoons (45-60 mL) ice water
  • 2 cups (300 g) fresh goumi berries (or frozen, thawed)
  • ½ cup (100 g) granulated sugar (adjust to taste)
  • 2 tablespoons (30 g) cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • ½ teaspoon cinnamon (optional)

Instructions:

  1. In a mixing bowl, combine flour and salt.
  2. Cut in the chilled butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until a dough forms.
  4. Shape into a disc, wrap in plastic, and chill for at least 30 minutes.
  5. In a mixing bowl, add goumi berries, sugar, cornstarch, vanilla extract, lemon juice, and cinnamon.
  6. Stir gently to coat the berries evenly and set aside.
  7. Preheat the oven to 375°F (190°C).
  8. Roll out the chilled dough on a floured surface to fit the pie dish.
  9. Transfer the dough to the pie dish, trimming excess.
  10. Pour the berry mixture into the crust.
  11. Roll out a second piece of dough for the top crust or make a lattice top.
  12. Cut slits for steam vents if using a solid top.
  13. Bake in preheated oven for 45 minutes or until golden and bubbly.
  14. Cool for at least 20 minutes before slicing.
