Ingredients:

  • 1 (30 oz) bag frozen hash browns, thawed (about 850 g)
  • 1 lb (450 g) breakfast sausage, casings removed
  • 6 large eggs
  • 2 cups shredded cheddar cheese (about 200 g)
  • 1 cup milk (240 ml)
  • 1 cup diced bell peppers (about 150 g)
  • ½ cup diced onion (about 75 g)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil (15 ml)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add sausage, breaking it up with a spatula; cook until browned and fully cooked (about 5-7 minutes). Drain excess fat.
  3. In a mixing bowl, whisk together eggs, milk, garlic powder, salt, and pepper until well combined.
  4. In the prepared baking dish, layer the thawed hash browns evenly across the bottom. Spread cooked sausage over the hash browns. Sprinkle diced bell peppers and onion on top of the sausage. Pour the egg mixture evenly over the layers. Top with shredded cheddar cheese.
  5. Bake in the preheated oven for about 45 minutes, or until the top is golden and the casserole is set.
  6. Let the casserole cool for 5-10 minutes before cutting into squares and serving hot.
