Ingredients:
- 1 ½ cups (180 g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 large eggs
- 1 cup (200 g) granulated sugar
- ½ cup (120 ml) vegetable oil or melted coconut oil
- 1 teaspoon pure vanilla extract
- 1 ½ cups (about 2 medium) grated zucchini, drained of excess moisture
- ½ cup (75 g) chopped walnuts or pecans (optional)
- ½ cup (90 g) chocolate chips or raisins (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- Prepare the loaf pan by greasing it or lining it with parchment paper.
- In a large bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, beat the eggs. Add the sugar, oil, and vanilla extract. Mix until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Gently fold in the grated zucchini and optional add-ins (nuts or chocolate chips, if using).
- Pour batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
