  • 1 ½ cups (180 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 large eggs
  • 1 cup (200 g) granulated sugar
  • ½ cup (120 ml) vegetable oil or melted coconut oil
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups (about 2 medium) grated zucchini, drained of excess moisture
  • ½ cup (75 g) chopped walnuts or pecans (optional)
  • ½ cup (90 g) chocolate chips or raisins (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the loaf pan by greasing it or lining it with parchment paper.
  3. In a large bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In a separate bowl, beat the eggs. Add the sugar, oil, and vanilla extract. Mix until smooth.
  5. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  6. Gently fold in the grated zucchini and optional add-ins (nuts or chocolate chips, if using).
  7. Pour batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
