Ingredients:

  • 1 ½ cups rolled oats
  • 1 ½ cups all-purpose flour
  • ½ cup unsulfured molasses
  • 1 cup warm water
  • ¼ cup brown sugar
  • 2 tbsp vegetable oil
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup chopped nuts (optional)
  • ½ cup dried fruit (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine oats and warm water. Let sit for 10 minutes to soften the oats.
  3. In a medium bowl, whisk together molasses, brown sugar, oil, baking powder, baking soda, salt, and cinnamon.
  4. Pour the molasses mixture into the softened oats and stir until well combined.
  5. Gradually fold in the flour until just mixed; do not overwork the dough.
  6. If using, fold in nuts or dried fruit at this stage.
  7. Transfer the dough into a greased loaf pan, smoothing the top with a spatula.
  8. Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
