Ingredients:
- 1 ½ cups rolled oats
- 1 ½ cups all-purpose flour
- ½ cup unsulfured molasses
- 1 cup warm water
- ¼ cup brown sugar
- 2 tbsp vegetable oil
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ cup chopped nuts (optional)
- ½ cup dried fruit (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine oats and warm water. Let sit for 10 minutes to soften the oats.
- In a medium bowl, whisk together molasses, brown sugar, oil, baking powder, baking soda, salt, and cinnamon.
- Pour the molasses mixture into the softened oats and stir until well combined.
- Gradually fold in the flour until just mixed; do not overwork the dough.
- If using, fold in nuts or dried fruit at this stage.
- Transfer the dough into a greased loaf pan, smoothing the top with a spatula.
- Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
