- 1/2 cup (120ml) unsweetened molasses
- 1/2 cup (120ml) warm water
- 1/4 cup (60ml) vegetable oil or melted coconut oil
- 2 tablespoons (30g) brown sugar
- 1 tablespoon (10g) baking powder
- 1 teaspoon (6g) salt
- 1 teaspoon (5g) ground cinnamon
- 1/2 teaspoon (2g) baking soda
- 1/2 cup (75g) chopped nuts (optional)
- 1/2 cup (75g) dried fruit (optional)
Instructions:
- Preheat the Oven: Preheat to 350°F (175°C).
- Prepare the Bread Pan: Grease the loaf pan with oil or line it with parchment paper.
- Mix Dry Ingredients: In a large bowl, combine oats, whole wheat flour, all-purpose flour, baking powder, baking soda, salt, and cinnamon.
- Combine Wet Ingredients: In a separate bowl, whisk together molasses, warm water, vegetable oil, and brown sugar until smooth.
- Combine Ingredients: Pour the wet mixture into the dry ingredients and stir until just combined. Fold in any optional add-ins.
- Transfer to Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake: Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Cool: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
