Ingredients:

  • 4 (6-ounce) salmon fillets, skin-on
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons fresh thyme leaves
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the baking sheet by lining it with parchment paper or lightly greasing it.
  3. In a bowl, combine parsley, dill, thyme, garlic, Dijon mustard, olive oil, and lemon juice. Mix well to make the herb mixture.
  4. Place salmon fillets on the baking sheet, seasoning with salt and pepper.
  5. Generously top each salmon fillet with the herb mixture, ensuring even coverage.
  6. Place in the preheated oven and bake for 12-15 minutes until the salmon flakes easily with a fork or reaches an internal temperature of 145°F (63°C).
  7. Serve immediately, garnished with additional herbs or lemon wedges if desired.
