Ingredients:

  • 4 boneless, skinless chicken breasts (approx. 7 oz each)
  • 1 tbsp extra virgin olive oil
  • 1 tsp fine sea salt
  • 1/2 tsp freshly cracked black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp light brown sugar

Instructions:

  1. Place the chicken breasts between two sheets of plastic wrap. Use the flat side of a meat mallet to gently pound the thickest part of the breast until it is a consistent 3/4-inch thickness.
  2. Pat each breast bone-dry with paper towels to ensure a proper sear and prevent steaming.
  3. In a small bowl, combine the sea salt, black pepper, smoked paprika, garlic powder, dried oregano, and brown sugar.
  4. Coat the chicken breasts thoroughly with olive oil, then apply the dry rub evenly to all sides.
  5. Place the chicken on a rimmed baking sheet lined with parchment paper, leaving space between each piece.
  6. Bake at 425°F (220°C) for 15 minutes, or until an instant-read thermometer reaches an internal temperature of 165°F (74°C).
