Ingredients:
- 4 corbina fillets (about 6 oz each) (170 g)
- 4 tablespoons olive oil (60 mL)
- 2 organic lemons (zested and juiced)
- 2 cloves garlic, minced
- 1 teaspoon salt (5 g)
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (30 g)
- Lemon wedges for serving
- Fresh parsley, chopped
Instructions:
- In a mixing bowl, combine olive oil, lemon zest, lemon juice, minced garlic, salt, and pepper.
- Place corbina fillets in the marinade, making sure they are well coated. Cover and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- Arrange the marinated fillets in a baking dish and pour any remaining marinade over the top. Bake for 20-25 minutes, or until the fish flakes easily with a fork.
- Remove from oven, garnish with fresh parsley, and serve with lemon wedges.
