Ingredients:

  • 4 corbina fillets (about 6 oz each) (170 g)
  • 4 tablespoons olive oil (60 mL)
  • 2 organic lemons (zested and juiced)
  • 2 cloves garlic, minced
  • 1 teaspoon salt (5 g)
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (30 g)
  • Lemon wedges for serving
  • Fresh parsley, chopped

Instructions:

  1. In a mixing bowl, combine olive oil, lemon zest, lemon juice, minced garlic, salt, and pepper.
  2. Place corbina fillets in the marinade, making sure they are well coated. Cover and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Arrange the marinated fillets in a baking dish and pour any remaining marinade over the top. Bake for 20-25 minutes, or until the fish flakes easily with a fork.
  5. Remove from oven, garnish with fresh parsley, and serve with lemon wedges.
