Instructions:
- In a mixing bowl, combine flour, sugar, and salt.
- Add chilled butter and mix until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, until dough forms.
- Shape into a disc, wrap in plastic, and chill for 30 minutes.
- In a bowl, gently mix Goumi berries, sugar, cornstarch, lemon juice, and vanilla extract.
- Let the mixture sit while preparing the crust.
- Preheat the oven to 375°F (190°C).
- Roll out the chilled dough on a floured surface to fit the pie dish.
- Place the rolled dough in the pie dish and trim excess edges.
- Pour the filling into the crust, spreading evenly.
- Bake in the preheated oven for 45 minutes, or until the crust is golden brown and the filling is bubbling.
- Check for doneness by ensuring that the filling is visibly bubbling.
- Remove from the oven and cool for at least 15 minutes before serving.
