Instructions:

  1. In a mixing bowl, combine flour, sugar, and salt.
  2. Add chilled butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, until dough forms.
  4. Shape into a disc, wrap in plastic, and chill for 30 minutes.
  5. In a bowl, gently mix Goumi berries, sugar, cornstarch, lemon juice, and vanilla extract.
  6. Let the mixture sit while preparing the crust.
  7. Preheat the oven to 375°F (190°C).
  8. Roll out the chilled dough on a floured surface to fit the pie dish.
  9. Place the rolled dough in the pie dish and trim excess edges.
  10. Pour the filling into the crust, spreading evenly.
  11. Bake in the preheated oven for 45 minutes, or until the crust is golden brown and the filling is bubbling.
  12. Check for doneness by ensuring that the filling is visibly bubbling.
  13. Remove from the oven and cool for at least 15 minutes before serving.
  14. Slice and enjoy your Goumi Berry Pie warm or at room temperature.
