Ingredients:
- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 4 large eggs, at room temperature
- 1 cup granulated sugar
- ½ cup whole milk
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- ½ cup evaporated milk
- ½ cup sweetened condensed milk
- 1 cup whole milk
- 2 ripe bananas, sliced
- 1 box instant vanilla pudding mix
- 2 cups cold milk
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Additional banana slices for garnish (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, beat eggs and sugar until light and fluffy.
- Gradually mix in milk, oil, and vanilla.
- Combine dry ingredients with wet, mixing until just combined.
- Pour batter into a greased baking pan and bake for 25-30 minutes, or until a toothpick comes out clean.
- Combine evaporated milk, sweetened condensed milk, and whole milk in a bowl.
- Once the cake is cool, poke holes all over the surface with a fork.
- Pour the milk mixture over the cake evenly and allow it to soak for at least 30 minutes in the fridge.
- Whisk together pudding mix and cold milk until thickened. Fold in sliced bananas.
- Once soaked, spread banana pudding over the top of the cake.
- In a bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form. Spread over the banana pudding.
- Cover with plastic wrap and refrigerate for at least 2 hours or overnight. Slice and serve chilled, garnished with additional banana slices as desired.
