Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 4 large eggs, at room temperature
  • 1 cup granulated sugar
  • ½ cup whole milk
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup evaporated milk
  • ½ cup sweetened condensed milk
  • 1 cup whole milk
  • 2 ripe bananas, sliced
  • 1 box instant vanilla pudding mix
  • 2 cups cold milk
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Additional banana slices for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, beat eggs and sugar until light and fluffy.
  4. Gradually mix in milk, oil, and vanilla.
  5. Combine dry ingredients with wet, mixing until just combined.
  6. Pour batter into a greased baking pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Combine evaporated milk, sweetened condensed milk, and whole milk in a bowl.
  8. Once the cake is cool, poke holes all over the surface with a fork.
  9. Pour the milk mixture over the cake evenly and allow it to soak for at least 30 minutes in the fridge.
  10. Whisk together pudding mix and cold milk until thickened. Fold in sliced bananas.
  11. Once soaked, spread banana pudding over the top of the cake.
  12. In a bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form. Spread over the banana pudding.
  13. Cover with plastic wrap and refrigerate for at least 2 hours or overnight. Slice and serve chilled, garnished with additional banana slices as desired.
