Ingredients:

  • 3 tbsp (24g) superfine almond flour
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1g) fine salt
  • 1 large (50g) egg
  • 1 tbsp (14g) unsalted butter, melted

Instructions:

  1. Combine the almond flour, baking powder, and salt. Note: Whisking the dry ingredients first prevents clumps
  2. Stir in the melted butter and egg.
  3. Whisk vigorously with a fork. Continue until the batter is completely smooth and no almond flour pockets remain.
  4. Pour the mixture into your microwave safe container.
  5. Microwave on high for 90 seconds (1200W) or up to 120 seconds (700-800W).
  6. Check for doneness. The top should spring back when touched and the edges should pull away from the sides.
  7. Carefully slide the bread out of the container.
  8. Slice the bread into two equal halves.
  9. Sear in a pan with a pat of butter over medium heat.
  10. Cook for 1-2 mins until a mahogany colored, crisp crust forms on both sides.
