Ingredients:

  • 1 pound (450g) fresh blackberries, rinsed and drained
  • ½ cup (120ml) water
  • ¼ cup (50g) granulated sugar
  • 2 Earl Grey tea bags
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon ground cinnamon
  • Pinch of sea salt

Instructions:

  1. In the saucepan, combine blackberries, water, sugar, balsamic vinegar, cinnamon, and salt.
  2. Nestle the Earl Grey tea bags into the blackberry mixture, ensuring they are submerged.
  3. Bring the mixture to a gentle simmer over medium heat.
  4. Reduce the heat to low and simmer, uncovered, for 15-20 minutes, or until the blackberries have softened and the compote has thickened slightly. Stir occasionally to prevent sticking.
  5. Remove the tea bags (squeeze gently to extract any remaining flavour). Taste the compote and add more sugar or balsamic vinegar if needed.
  6. Allow the compote to cool slightly before serving. It can be served warm or cold.
