Ingredients:
- 1 pound (450g) fresh blackberries, rinsed and drained
- ½ cup (120ml) water
- ¼ cup (50g) granulated sugar
- 2 Earl Grey tea bags
- 1 tablespoon balsamic vinegar
- ½ teaspoon ground cinnamon
- Pinch of sea salt
Instructions:
- In the saucepan, combine blackberries, water, sugar, balsamic vinegar, cinnamon, and salt.
- Nestle the Earl Grey tea bags into the blackberry mixture, ensuring they are submerged.
- Bring the mixture to a gentle simmer over medium heat.
- Reduce the heat to low and simmer, uncovered, for 15-20 minutes, or until the blackberries have softened and the compote has thickened slightly. Stir occasionally to prevent sticking.
- Remove the tea bags (squeeze gently to extract any remaining flavour). Taste the compote and add more sugar or balsamic vinegar if needed.
- Allow the compote to cool slightly before serving. It can be served warm or cold.
