Ingredients:
- 2 ½ cups (315g) all-purpose flour
- 1 packet (2 ¼ teaspoons/7g) instant yeast
- 1 teaspoon granulated sugar
- 1 teaspoon salt
- 1 cup (240ml) warm water (110°F/43°C)
- 2 tablespoons (28g) unsalted butter, melted
- 10 cups (2.4L) water (for boiling)
- ⅔ cup (100g) baking soda
- 1 tablespoon coarse sea salt (for topping)
- 2 cups (100g) tortilla chips (or your choice of crunchy snacks)
Instructions:
- In a large mixing bowl, combine flour, yeast, sugar, and salt.
- Gradually pour in warm water and melted butter, mixing until a dough forms.
- Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
- Cover the dough with a towel and let it rest for 30 minutes, allowing it to rise.
- Preheat your oven to 425°F (218°C). Once rested, divide the dough into equal pieces (about 24) and roll each into a small ball.
- In a large pot, bring 10 cups of water to a rolling boil. Carefully whisk in baking soda.
- Lower the pretzel bites into the boiling water in batches, cooking for about 30 seconds per batch.
- Use a slotted spoon to remove bites, letting excess water drain.
- Place bites on a lined baking sheet, sprinkle with coarse salt, and bake for 12-15 minutes, until golden brown.
- Allow to cool slightly on a rack, serve warm with crunchy chips.
