Ingredients:
- 2 ½ cups (225g) old-fashioned rolled oats
- ½ tsp (3g) sea salt
- ½ tsp (2g) ground cinnamon
- ½ cup (170g) honey
- ⅓ cup (75g) unsalted butter
- 1 tsp (5ml) pure vanilla extract
- ½ cup (90g) semi-sweet chocolate chips
Instructions:
- Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- Place the honey and butter in a medium saucepan over medium heat. Stir constantly until the butter is melted and the mixture begins to bubble slightly.
- Remove the saucepan from heat immediately and stir in the vanilla extract.
- Add the rolled oats, salt, and cinnamon to the saucepan. Stir vigorously until every oat is evenly coated in the syrup, then remove from heat and let cool for 3-5 minutes.
- Fold in the semi-sweet chocolate chips until evenly distributed.
- Transfer the mixture to the prepared baking pan. Use the bottom of a flat glass or a spatula to press the mixture firmly into an even layer.
- Chill the bars in the refrigerator for 2 hours before slicing into 12 equal portions.
