Ingredients:

  • 1/2 cup (125g) creamy peanut butter
  • 1/3 cup (110g) honey
  • 1 tsp (5ml) pure vanilla extract
  • 1/4 tsp (1.5g) fine sea salt
  • 1 cup (90g) old fashioned rolled oats
  • 2 tbsp (14g) ground flaxseed
  • 2 tbsp (10g) unsweetened shredded coconut
  • 1/4 cup (40g) mini dark chocolate chips

Instructions:

  1. In a medium mixing bowl, combine the peanut butter, honey, vanilla, and salt. Stir vigorously until the mixture is glossy and completely emulsified.
  2. Add the rolled oats, flaxseed, and coconut to the wet mixture. Use a spatula to fold the ingredients together until no dry streaks of oats remain.
  3. Stir in the mini dark chocolate chips until evenly distributed.
  4. Scoop approximately 1 tablespoon of dough and roll it between your palms to form a smooth sphere. Place each ball on a parchment-lined baking sheet.
  5. Transfer the tray to the refrigerator for at least 60 minutes until the exterior feels firm.
