Ingredients:
- 1/2 cup (125g) creamy peanut butter
- 1/3 cup (110g) honey
- 1 tsp (5ml) pure vanilla extract
- 1/4 tsp (1.5g) fine sea salt
- 1 cup (90g) old fashioned rolled oats
- 2 tbsp (14g) ground flaxseed
- 2 tbsp (10g) unsweetened shredded coconut
- 1/4 cup (40g) mini dark chocolate chips
Instructions:
- In a medium mixing bowl, combine the peanut butter, honey, vanilla, and salt. Stir vigorously until the mixture is glossy and completely emulsified.
- Add the rolled oats, flaxseed, and coconut to the wet mixture. Use a spatula to fold the ingredients together until no dry streaks of oats remain.
- Stir in the mini dark chocolate chips until evenly distributed.
- Scoop approximately 1 tablespoon of dough and roll it between your palms to form a smooth sphere. Place each ball on a parchment-lined baking sheet.
- Transfer the tray to the refrigerator for at least 60 minutes until the exterior feels firm.
