Ingredients:
- 150g (1 cup) whole wheat flour
- 50g (1/4 cup) plain (all-purpose) flour
- 100g (1/2 cup) unsalted butter, softened
- 75g (1/3 cup) granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 50ml (1/4 cup) milk
- 200g (7 oz) dark chocolate (at least 70% cocoa)
Instructions:
- Preheat your oven to 180°C (350°F).
- Combine whole wheat flour, plain flour, baking powder, baking soda, and salt in a bowl.
- In a separate bowl, cream together softened butter and sugar until light and fluffy.
- Gradually add the dry ingredients to the butter mixture, mixing until combined.
- Add milk gradually, stirring until a dough forms.
- Turn dough out onto a floured surface. Roll to about 5mm (1/4 inch) thickness.
- Cut into rounds or desired shapes using a biscuit cutter. Place on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes until lightly golden.
- Allow biscuits to cool on a wire rack.
- While biscuits cool, melt the dark chocolate using a double boiler or microwave until smooth.
- Dip half of each cooled biscuit into the melted chocolate, letting excess drip off.
- Place dipped biscuits back on the cooling rack to set. For quicker setting, refrigerate for 10 minutes.
