Ingredients:

  • 150g (1 cup) whole wheat flour
  • 50g (1/4 cup) plain (all-purpose) flour
  • 100g (1/2 cup) unsalted butter, softened
  • 75g (1/3 cup) granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 50ml (1/4 cup) milk
  • 200g (7 oz) dark chocolate (at least 70% cocoa)

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. Combine whole wheat flour, plain flour, baking powder, baking soda, and salt in a bowl.
  3. In a separate bowl, cream together softened butter and sugar until light and fluffy.
  4. Gradually add the dry ingredients to the butter mixture, mixing until combined.
  5. Add milk gradually, stirring until a dough forms.
  6. Turn dough out onto a floured surface. Roll to about 5mm (1/4 inch) thickness.
  7. Cut into rounds or desired shapes using a biscuit cutter. Place on a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 15-20 minutes until lightly golden.
  9. Allow biscuits to cool on a wire rack.
  10. While biscuits cool, melt the dark chocolate using a double boiler or microwave until smooth.
  11. Dip half of each cooled biscuit into the melted chocolate, letting excess drip off.
  12. Place dipped biscuits back on the cooling rack to set. For quicker setting, refrigerate for 10 minutes.
