Ingredients:

  • 2 large (approx. 7 oz / 200g) ripe bananas, sliced into ½ inch (1.3cm) rounds
  • 1 tbsp (14g) melted coconut oil or butter
  • 2 tbsp (28g) unsalted butter
  • 2 tbsp (25g) brown sugar, packed
  • 1 tsp (2.6g) ground cinnamon
  • 1 pinch (0.5g) sea salt

Instructions:

  1. Slice the bananas into consistent ½ inch (1.3cm) rounds. In a small bowl, whisk together the brown sugar, cinnamon, and sea salt until no clumps remain.
  2. Heat the melted coconut oil or butter in a non-stick skillet over medium heat. Once shimmering, place the banana rounds in a single layer and sear for 2–3 minutes without moving them until they develop a golden-brown hue.
  3. Add the 2 tbsp (28g) of unsalted butter to the pan. Once melted, sprinkle the cinnamon-sugar mixture evenly over the bananas.
  4. Carefully flip each bite to coat them in the bubbling syrup. Cook for another 2 minutes until the sauce thickens into a mahogany-colored glaze.
