Ingredients:
- 3 large ripe bananas, mashed (approx. 1 ½ cups / 340g)
- ½ cup (115g) unsalted butter, melted and slightly cooled
- ¾ cup (150g) light brown sugar, packed
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 ½ cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 2 tbsp (25g) light brown sugar
- 1 tsp (2g) ground cinnamon
Instructions:
- Preheat your oven to 175°C (350°F) and grease your loaf pan or line it with parchment paper.
- In a large bowl, mash the 340g of ripe bananas until relatively smooth.
- Stir in the melted butter, brown sugar, egg, and vanilla extract until the mixture is velvety and well combined. Note: Don't overbeat the egg, just incorporate it.
- Whisk together the flour, baking soda, salt, and cinnamon in a separate small bowl.
- Gently fold the dry ingredients into the banana mixture using a spatula, mixing only until no streaks of flour remain.
- Pour half of the batter into the prepared pan.
- Sprinkle the cinnamon sugar swirl mixture (2 tbsp brown sugar and 1 tsp cinnamon) evenly over the batter.
- Top with the remaining batter and use a knife to gently swirl the cinnamon layer into the Cinnamon Spice Banana Bread.
- Bake for 50 minutes until a toothpick inserted into the center comes out clean and the top is golden brown.
