Ingredients:
- 1/2 cup (100g) granulated sugar
- 2 tsp (5g) ground cinnamon
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) granulated sugar
- 1 tbsp (8g) baking powder
- 1/2 tsp (3g) baking soda
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (1g) ground nutmeg
- 1/4 tsp (1.5g) salt
- 1 cup (240ml) buttermilk
- 2 large eggs
- 1/2 cup (120ml) vegetable oil
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line the bottom with parchment paper.
- In a small bowl, whisk together 1/2 cup granulated sugar and 2 tsp ground cinnamon for the swirl; set aside.
- In a large bowl, whisk together the flour, 3/4 cup sugar, baking powder, baking soda, 1 tsp cinnamon, nutmeg, and salt until fully combined.
- In a separate medium bowl, beat the eggs, then whisk in the buttermilk, vegetable oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined; do not overmix.
- Pour half of the batter into the prepared pan. Sprinkle half of the cinnamon-sugar mixture evenly over the top.
- Pour the remaining batter over the sugar, then sprinkle the remaining cinnamon sugar on top.
- Use a butter knife or skewer to gently swirl the sugar into the batter in a figure-eight motion.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean and the top is deeply golden.
