Ingredients:

  • 1 ¾ cups (220g) all-purpose flour
  • 1 tsp (5g) baking soda
  • ½ tsp (2g) baking powder
  • 1 tbsp (8g) ground cinnamon
  • 1 tsp (2g) pumpkin pie spice
  • ½ tsp (3g) salt
  • 1 cup (200g) brown sugar, packed
  • ½ cup (120ml) vegetable oil
  • 2 large eggs
  • 1 can (15 oz / 425g) pumpkin puree
  • 1 tsp (5ml) vanilla extract
  • ¼ cup (50g) brown sugar
  • 1 tbsp (8g) ground cinnamon
  • 2 tbsp (28g) unsalted butter, melted

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper for a clean release.
  2. In a large bowl, whisk together the oil, brown sugar, eggs, pumpkin puree, and vanilla extract until the mixture is smooth and the sugar has dissolved.
  3. Sift in the flour, baking soda, baking powder, cinnamon, pumpkin spice, and salt.
  4. Use a spatula to fold the dry ingredients into the wet until just combined. Stop as soon as no streaks of flour remain to avoid a tough texture.
  5. In a small bowl, stir together the brown sugar, cinnamon, and melted butter until it forms a thick, sandy paste.
  6. Pour exactly half of the pumpkin batter into the prepared loaf pan and smooth the top with a spatula.
  7. Spoon the cinnamon sugar mixture over the batter in a centered strip, using a knife to gently swirl it into the batter in a figure-eight motion.
  8. Carefully pour the remaining pumpkin batter over the top, smoothing it to the edges.
  9. Bake for 55–65 minutes. The bread is ready when the top is a deep mahogany brown and a toothpick inserted into the center comes out clean.
