Ingredients:

  • 1 ½ cups (192g) all-purpose flour
  • 2 teaspoons (8g) baking powder
  • ¼ teaspoon (1g) salt
  • 2 tablespoons (25g) granulated sugar
  • 1 ¼ cups (300ml) milk
  • 1 large egg
  • 1 teaspoon (5ml) vanilla extract
  • 4 cups (950ml) vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions:

  1. Heat vegetable oil in a large pot or deep fryer to 375°F (190°C). Maintain this temperature throughout frying.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together milk, egg, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and whisk until just combined. Do not overmix.
  5. Pour batter into a funnel, pastry bag, or pitcher with a spout.
  6. Hold the funnel or bag over the hot oil, releasing batter in a swirling motion to create the funnel cake shape.
  7. Fry for 2-3 minutes per side, until golden brown and crispy.
  8. Remove funnel cakes with a slotted spoon or tongs and place on paper towels to drain excess oil. Dust generously with powdered sugar and serve immediately.
