Ingredients:
- 1 ½ cups (192g) all-purpose flour
- 2 teaspoons (8g) baking powder
- ¼ teaspoon (1g) salt
- 2 tablespoons (25g) granulated sugar
- 1 ¼ cups (300ml) milk
- 1 large egg
- 1 teaspoon (5ml) vanilla extract
- 4 cups (950ml) vegetable oil, for frying
- Powdered sugar, for dusting
Instructions:
- Heat vegetable oil in a large pot or deep fryer to 375°F (190°C). Maintain this temperature throughout frying.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together milk, egg, and vanilla extract.
- Pour wet ingredients into dry ingredients and whisk until just combined. Do not overmix.
- Pour batter into a funnel, pastry bag, or pitcher with a spout.
- Hold the funnel or bag over the hot oil, releasing batter in a swirling motion to create the funnel cake shape.
- Fry for 2-3 minutes per side, until golden brown and crispy.
- Remove funnel cakes with a slotted spoon or tongs and place on paper towels to drain excess oil. Dust generously with powdered sugar and serve immediately.
