Ingredients:

  • 4 boneless, skinless chicken breasts (about 6 oz each / 170 g)
  • 1 cup (100 g) all-purpose flour
  • 2 large eggs
  • 1 cup (100 g) breadcrumbs (preferably Italian-style)
  • ½ cup (50 g) grated Parmesan cheese
  • Salt and pepper, to taste
  • ½ teaspoon garlic powder
  • 4 sub rolls or thick slices of ciabatta bread
  • 2 cups (480 ml) marinara sauce (store-bought or homemade)
  • 2 cups (200 g) shredded mozzarella cheese
  • Fresh basil leaves, for garnish (optional)
  • Olive oil, for frying

Instructions:

  1. Pound chicken breasts to an even thickness and season with salt and pepper.
  2. Set up three shallow dishes: one for flour, one for beaten eggs, and one for breadcrumbs mixed with Parmesan and garlic powder.
  3. Dredge each chicken breast in flour, dip in eggs, and press into the breadcrumb mixture until fully coated.
  4. Heat olive oil in a large skillet over medium heat and fry chicken until golden brown, about 4-5 minutes per side.
  5. Preheat oven to 375°F (190°C). Place a slice of bread on a baking sheet, spoon marinara sauce on top, add fried chicken, and top with mozzarella.
  6. Bake in the preheated oven until cheese is bubbly and golden, approximately 10 minutes.
  7. Garnish with fresh basil and serve on sub rolls.
