Ingredients:
- 4 boneless, skinless chicken breasts (about 6 oz each / 170 g)
- 1 cup (100 g) all-purpose flour
- 2 large eggs
- 1 cup (100 g) breadcrumbs (preferably Italian-style)
- ½ cup (50 g) grated Parmesan cheese
- Salt and pepper, to taste
- ½ teaspoon garlic powder
- 4 sub rolls or thick slices of ciabatta bread
- 2 cups (480 ml) marinara sauce (store-bought or homemade)
- 2 cups (200 g) shredded mozzarella cheese
- Fresh basil leaves, for garnish (optional)
- Olive oil, for frying
Instructions:
- Pound chicken breasts to an even thickness and season with salt and pepper.
- Set up three shallow dishes: one for flour, one for beaten eggs, and one for breadcrumbs mixed with Parmesan and garlic powder.
- Dredge each chicken breast in flour, dip in eggs, and press into the breadcrumb mixture until fully coated.
- Heat olive oil in a large skillet over medium heat and fry chicken until golden brown, about 4-5 minutes per side.
- Preheat oven to 375°F (190°C). Place a slice of bread on a baking sheet, spoon marinara sauce on top, add fried chicken, and top with mozzarella.
- Bake in the preheated oven until cheese is bubbly and golden, approximately 10 minutes.
- Garnish with fresh basil and serve on sub rolls.
