  • 2 large eggs
  • 1 ½ cups milk (whole or 2%)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar (optional for sweet crepes)
  • ½ teaspoon salt
  • Fresh fruits (like strawberries or bananas)
  • Nutella or chocolate spread
  • Lemon juice and powdered sugar for serving

Instructions:

  1. In a mixing bowl, whisk together flour and eggs. Gradually add milk, whisking to combine until smooth.
  2. Stir in melted butter, sugar (if using), and salt.
  3. Cover the bowl and refrigerate for 30 minutes.
  4. Preheat a non-stick skillet over medium heat and lightly grease with butter.
  5. Pour about ¼ cup of batter into the skillet, quickly swirling to coat the skillet evenly.
  6. Cook for 1-2 minutes until edges lift and bottom is lightly golden. Flip and cook for another 30 seconds to 1 minute.
  7. Repeat with remaining batter, stacking crepes on a plate.
  8. Fill or top crepes with your desired ingredients. Enjoy with a sprinkle of sugar or a drizzle of syrup.
