Ingredients:
- 2 cups (250g) all-purpose flour
- ½ teaspoon (2g) salt
- ½ teaspoon (2g) baking powder
- 4 tablespoons (60ml) olive oil
- ¾ cup (180ml) lukewarm water
- 100g thinly sliced prosciutto or salami
- 100g sliced mozzarella or burrata
- Handful of fresh arugula or spinach
- Optional: pesto, sun-dried tomatoes, or roasted peppers
Instructions:
- In a mixing bowl, combine flour, salt, and baking powder. Add olive oil and mix until crumbly. Slowly add lukewarm water until a soft dough forms. Knead lightly for 2-3 minutes until smooth. Cover and let rest for 30 minutes.
- Divide the rested dough into 4 equal pieces. Roll out each piece on a floured surface until thin (about ¼ inch).
- Heat a non-stick skillet or griddle over medium heat. Cook each rolled-out piadina for about 2-3 minutes on each side until golden and slightly crispy, adjusting the heat as necessary. Keep warm under a towel.
- Once cooked, fill the piadina with your desired fillings—layering meats, cheeses, and greens as preferred. Fold or roll it up.
- Cut in half if desired and enjoy warm!
