Ingredients:

  • 4 large egg yolks (about 240g)
  • 1/3 cup granulated sugar (67g)
  • 1/2 cup sweet Marsala wine (120ml)
  • Fresh berries or cookie crumbles for garnish (optional)

Instructions:

  1. Prepare the Double Boiler by filling a saucepan with a few inches of water and bringing it to a gentle simmer.
  2. Place a heatproof bowl over the saucepan, ensuring it doesn’t touch the water.
  3. In the mixing bowl, whisk together egg yolks and sugar until smooth and pale.
  4. Gradually whisk in the Marsala wine until thoroughly combined.
  5. Place the bowl over the simmering water and whisk continuously for 6-8 minutes until the mixture thickens and doubles in volume to a light, frothy consistency.
  6. Remove from heat and let cool slightly before serving warm in individual glasses or bowls, garnished with fresh berries or cookie crumbles.
