Ingredients:
- 4 large egg yolks (about 240g)
- 1/3 cup granulated sugar (67g)
- 1/2 cup sweet Marsala wine (120ml)
- Fresh berries or cookie crumbles for garnish (optional)
Instructions:
- Prepare the Double Boiler by filling a saucepan with a few inches of water and bringing it to a gentle simmer.
- Place a heatproof bowl over the saucepan, ensuring it doesn’t touch the water.
- In the mixing bowl, whisk together egg yolks and sugar until smooth and pale.
- Gradually whisk in the Marsala wine until thoroughly combined.
- Place the bowl over the simmering water and whisk continuously for 6-8 minutes until the mixture thickens and doubles in volume to a light, frothy consistency.
- Remove from heat and let cool slightly before serving warm in individual glasses or bowls, garnished with fresh berries or cookie crumbles.
