Ingredients:

  • 1 lb (450 g) ground beef (80% lean)
  • 1 lb (450 g) ground pork
  • 1 cup (100 g) breadcrumbs (preferably Italian-style)
  • 1/2 cup (75 g) grated Parmesan cheese
  • 1/2 cup (120 mL) whole milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon (5 g) salt
  • 1/2 teaspoon (2 g) black pepper
  • 1 teaspoon (5 g) dried Italian herbs (basil, oregano)
  • 1/2 cup (120 mL) ketchup
  • 2 tablespoons (30 mL) brown sugar
  • 1 tablespoon (15 mL) Worcestershire sauce
  • 1 teaspoon (5 mL) apple cider vinegar
  • 1 teaspoon (5 g) smoked paprika (optional for a smoky flavor)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, milk, egg, onion, garlic, salt, pepper, and Italian herbs. Mix thoroughly until just combined; do not overmix.
  3. Transfer the meat mixture into a loaf pan, shaping it to fit snugly.
  4. In a separate bowl, prepare the glaze by whisking together ketchup, brown sugar, Worcestershire sauce, apple cider vinegar, and smoked paprika until smooth.
  5. Spread half of the glaze evenly over the top of the meatloaf.
  6. Bake in the preheated oven for about 40 minutes.
  7. Remove from the oven, brush with the remaining glaze, and return to the oven for another 20 minutes.
  8. Check doneness with a meat thermometer; it should read 160°F (71°C).
  9. Let the meatloaf rest for 10 minutes before slicing and serving.
