Ingredients:
- 1 lb (450 g) ground beef (80% lean)
- 1 lb (450 g) ground pork
- 1 cup (100 g) breadcrumbs (preferably Italian-style)
- 1/2 cup (75 g) grated Parmesan cheese
- 1/2 cup (120 mL) whole milk
- 1 large egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon (5 g) salt
- 1/2 teaspoon (2 g) black pepper
- 1 teaspoon (5 g) dried Italian herbs (basil, oregano)
- 1/2 cup (120 mL) ketchup
- 2 tablespoons (30 mL) brown sugar
- 1 tablespoon (15 mL) Worcestershire sauce
- 1 teaspoon (5 mL) apple cider vinegar
- 1 teaspoon (5 g) smoked paprika (optional for a smoky flavor)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, milk, egg, onion, garlic, salt, pepper, and Italian herbs. Mix thoroughly until just combined; do not overmix.
- Transfer the meat mixture into a loaf pan, shaping it to fit snugly.
- In a separate bowl, prepare the glaze by whisking together ketchup, brown sugar, Worcestershire sauce, apple cider vinegar, and smoked paprika until smooth.
- Spread half of the glaze evenly over the top of the meatloaf.
- Bake in the preheated oven for about 40 minutes.
- Remove from the oven, brush with the remaining glaze, and return to the oven for another 20 minutes.
- Check doneness with a meat thermometer; it should read 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing and serving.
