Ingredients:

  • 750 ml Dry Red Wine (Tempranillo or Garnacha)
  • 120 ml Spanish Brandy
  • 60 ml Orange Liqueur (Cointreau or Grand Marnier)
  • 1 large Orange, half sliced into rounds and half juiced
  • 1 medium Lemon, sliced into rounds
  • 1 crisp Green Apple, cored and chopped into small cubes
  • 2 tbsp Granulated Sugar
  • 250 ml Sparkling Water or Club Soda
  • Fresh Mint sprigs
  • Large ice cubes

Instructions:

  1. Prep the fruit. Core and chop the green apple into 1 cm cubes.
  2. Slice the citrus. Cut half the orange and the whole lemon into thin rounds.
  3. Juice the orange. Squeeze the remaining half orange into a large glass pitcher.
  4. Dissolve the sugar. Add 2 tbsp sugar to the orange juice and stir until the liquid looks clear and no grains remain.
  5. Fortify the base. Pour in 120 ml brandy and 60 ml orange liqueur.
  6. Macerate the fruit. Toss in the apples, orange slices, and lemon slices, stirring to coat.
  7. Add the wine. Pour in the 750 ml of dry red wine and stir gently.
  8. The cold cure. Refrigerate for 4 hours until the color deepens and the aroma is intoxicating.
  9. The final spritz. Just before serving, pour in 250 ml sparkling water.
  10. Garnish and serve. Fill glasses with large ice, pour the mixture, and top with a fresh mint sprig.
