Ingredients:

  • 5 cups (2 Litres) Filtered Cold Water
  • 8 standard size Black Tea Bags (or 4 Tbsp loose leaf)
  • 1/2 cup Optional Sweetener (simple syrup recommended)
  • 1 large Fresh Lemon, sliced (for garnish)
  • 1/4 teaspoon Baking Soda (optional, for mellowing)

Instructions:

  1. Sanitise the Vessel: Ensure your large glass jar is spotlessly clean. Wash it thoroughly with hot, soapy water and rinse well to prevent bacterial growth.
  2. Add Water and Tea: Pour the filtered, cold water into the prepared glass jar. Add the tea bags (or loose leaf tea).
  3. Add Mellowing Agent (Optional): If using black tea, stir in the small pinch of baking soda to neutralise some of the tannic acids for a smoother flavour.
  4. Seal It Tight: Screw the lid onto the jar firmly to create a complete seal.
  5. Position the Brew: Place the sealed jar directly in a location that receives maximum, unobstructed direct sunlight.
  6. Monitor the Steep: Allow the Sun Tea to steep for 2 to 4 hours. The tea should achieve a rich, dark amber colour. Start tasting after 2 hours.
  7. Crucial Safety Step: Bring the tea indoors IMMEDIATELY once the desired colour and strength is achieved. Do not leave the tea outside in the sun for more than 4 hours.
  8. Strain and Sweeten: Once indoors, promptly remove the tea bags (or strain the entire liquid through a fine mesh sieve if using loose leaf). Stir in the simple syrup or desired sweetener until dissolved.
  9. Chill Thoroughly: Transfer the tea to a clean pitcher and place it in the refrigerator. Chill for at least 30 minutes until ice-cold.
  10. Serve: Serve over ice cubes, garnished with a fresh slice of lemon and mint, if desired.
