Ingredients:
- 4 oz (113 g) country ham, diced
- 1 cup (240 ml) brewed coffee (strong)
- 1 cup (240 ml) water
- 1 tablespoon (14 g) unsalted butter
- Salt and black pepper, to taste
Instructions:
- Heat the skillet over medium heat. Add the diced country ham and sauté until lightly browned and the fat has rendered, about 3-4 minutes.
- Remove the ham and set aside, leaving drippings in the pan. Add the brewed coffee directly to the skillet, scraping up any bits stuck to the pan (the fond).
- Stir in the water and simmer for another 2-3 minutes. Add butter and season with salt and black pepper to taste. Return the ham to the pan and let it heat through for another minute.
- Drizzle the red eye gravy over your choice of biscuits, grits, or fried eggs.
