Ingredients:

  • 4 oz (113 g) country ham, diced
  • 1 cup (240 ml) brewed coffee (strong)
  • 1 cup (240 ml) water
  • 1 tablespoon (14 g) unsalted butter
  • Salt and black pepper, to taste

Instructions:

  1. Heat the skillet over medium heat. Add the diced country ham and sauté until lightly browned and the fat has rendered, about 3-4 minutes.
  2. Remove the ham and set aside, leaving drippings in the pan. Add the brewed coffee directly to the skillet, scraping up any bits stuck to the pan (the fond).
  3. Stir in the water and simmer for another 2-3 minutes. Add butter and season with salt and black pepper to taste. Return the ham to the pan and let it heat through for another minute.
  4. Drizzle the red eye gravy over your choice of biscuits, grits, or fried eggs.
