Ingredients:

  • 2 cups whole milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 large egg yolks
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract

Instructions:

  1. Whisk together sugar, cornstarch, and salt in a medium saucepan.
  2. Gradually pour in the milk while whisking to avoid lumps.
  3. Cook over medium heat, stirring constantly, until thickened and bubbling (about 8-10 minutes).
  4. Whisk egg yolks in a heatproof bowl until smooth.
  5. Temper egg yolks by slowly adding hot pudding mixture while whisking.
  6. Return yolk mixture to saucepan and cook for another 2-3 minutes until thickened.
  7. Remove from heat, stir in butter and vanilla until smooth.
  8. Pour into serving dishes, cover with plastic wrap directly on surface, and chill for at least 30 minutes.
