Ingredients:

  • 1.5 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp sea salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 2 tbsp fresh lemon zest
  • 1 cup full-fat sour cream
  • 0.5 cup neutral oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp pure lemon extract
  • 1 tsp vanilla extract
  • 1 cup confectioners' sugar
  • 2 tbsp heavy cream
  • 1 tbsp fresh lemon juice

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper, leaving an overhang for easy removal.
  2. In a large mixing bowl, combine granulated sugar and lemon zest. Rub them together with your fingertips until the sugar is fragrant and moist.
  3. Whisk in the eggs, sour cream, oil, lemon juice, and extracts. Beat vigorously until the mixture is completely smooth and pale.
  4. Sift the flour, baking powder, baking soda, and salt directly over the wet mixture. Fold gently with a spatula just until no streaks of flour remain; do not overmix.
  5. Pour the batter into the prepared loaf pan and bake for 50 minutes, or until a skewer inserted into the center comes out clean.
  6. Prepare the icing by whisking together sifted confectioners' sugar, heavy cream, and 1 tablespoon of lemon juice until opaque and thick. Pour over the cooled loaf.
