Ingredients:
- 1.5 cups all-purpose flour
- 0.5 tsp baking powder
- 0.5 tsp baking soda
- 0.5 tsp sea salt
- 3 large eggs
- 1 cup granulated sugar
- 2 tbsp fresh lemon zest
- 1 cup full-fat sour cream
- 0.5 cup neutral oil
- 2 tbsp freshly squeezed lemon juice
- 1 tsp pure lemon extract
- 1 tsp vanilla extract
- 1 cup confectioners' sugar
- 2 tbsp heavy cream
- 1 tbsp fresh lemon juice
Instructions:
- Preheat your oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper, leaving an overhang for easy removal.
- In a large mixing bowl, combine granulated sugar and lemon zest. Rub them together with your fingertips until the sugar is fragrant and moist.
- Whisk in the eggs, sour cream, oil, lemon juice, and extracts. Beat vigorously until the mixture is completely smooth and pale.
- Sift the flour, baking powder, baking soda, and salt directly over the wet mixture. Fold gently with a spatula just until no streaks of flour remain; do not overmix.
- Pour the batter into the prepared loaf pan and bake for 50 minutes, or until a skewer inserted into the center comes out clean.
- Prepare the icing by whisking together sifted confectioners' sugar, heavy cream, and 1 tablespoon of lemon juice until opaque and thick. Pour over the cooled loaf.
