Ingredients:
- 1 (12-ounce) package fresh or frozen cranberries (340g)
- 1 large orange, unpeeled, quartered (about 200g)
- 1/2 cup white sugar (100g)
- 1/4 cup water (60 ml)
- 1/4 teaspoon ground cinnamon (approx. 1g)
- Pinch of ground cloves (approx. 0.5g) (optional)
Instructions:
- Rinse the cranberries thoroughly. Roughly chop the quartered orange (including the peel).
- Using a food processor, pulse the cranberries and orange until finely chopped. If using a knife, chop as finely as possible.
- In a medium saucepan, combine the chopped cranberry-orange mixture, sugar, water, cinnamon, and cloves (if using).
- Bring the mixture to a boil over medium heat, then reduce heat and simmer for about 15-20 minutes, stirring occasionally, until the cranberries have softened and the relish has thickened slightly.
- Remove from heat and let cool completely. The relish will thicken further as it cools. Serve chilled or at room temperature.
