Ingredients:

  • 1 (12-ounce) package fresh or frozen cranberries (340g)
  • 1 large orange, unpeeled, quartered (about 200g)
  • 1/2 cup white sugar (100g)
  • 1/4 cup water (60 ml)
  • 1/4 teaspoon ground cinnamon (approx. 1g)
  • Pinch of ground cloves (approx. 0.5g) (optional)

Instructions:

  1. Rinse the cranberries thoroughly. Roughly chop the quartered orange (including the peel).
  2. Using a food processor, pulse the cranberries and orange until finely chopped. If using a knife, chop as finely as possible.
  3. In a medium saucepan, combine the chopped cranberry-orange mixture, sugar, water, cinnamon, and cloves (if using).
  4. Bring the mixture to a boil over medium heat, then reduce heat and simmer for about 15-20 minutes, stirring occasionally, until the cranberries have softened and the relish has thickened slightly.
  5. Remove from heat and let cool completely. The relish will thicken further as it cools. Serve chilled or at room temperature.
