Ingredients:

  • 2 Large English Cucumbers, sliced into 1/4-inch rounds (peel on for texture)
  • 3 Large Roma Tomatoes, cut into thick wedges
  • 0.5 medium Red Onion, sliced into paper-thin half-moons
  • 1 tsp Sea Salt
  • 0.5 cup High-Quality Mayonnaise (with a hint of lemon, if possible)
  • 0.25 cup Full-Fat Sour Cream
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Granulated Sugar
  • 3 tbsp Fresh Dill, finely chopped
  • 0.5 tsp Coarse Black Pepper

Instructions:

  1. Place sliced cucumbers (peel on) and red onions in a colander set over a bowl. Sprinkle with sea salt and toss. Let sit for 5 minutes to draw out excess moisture.
  2. Pat the salted vegetables dry with a paper towel to remove surface water.
  3. In a small mixing bowl, combine apple cider vinegar and granulated sugar. Let sit for 2 minutes. Then, whisk in the mayonnaise, sour cream, and black pepper until smooth and sugar is dissolved.
  4. Fold the fresh chopped dill into the dressing mixture.
  5. Place the dried cucumbers, onions, and tomato wedges into a large chilled serving bowl. Pour the dressing over the vegetables and gently fold with a rubber spatula until evenly coated.
