Ingredients:
- 2 Large English Cucumbers, sliced into 1/4-inch rounds (peel on for texture)
- 3 Large Roma Tomatoes, cut into thick wedges
- 0.5 medium Red Onion, sliced into paper-thin half-moons
- 1 tsp Sea Salt
- 0.5 cup High-Quality Mayonnaise (with a hint of lemon, if possible)
- 0.25 cup Full-Fat Sour Cream
- 1 tbsp Apple Cider Vinegar
- 1 tsp Granulated Sugar
- 3 tbsp Fresh Dill, finely chopped
- 0.5 tsp Coarse Black Pepper
Instructions:
- Place sliced cucumbers (peel on) and red onions in a colander set over a bowl. Sprinkle with sea salt and toss. Let sit for 5 minutes to draw out excess moisture.
- Pat the salted vegetables dry with a paper towel to remove surface water.
- In a small mixing bowl, combine apple cider vinegar and granulated sugar. Let sit for 2 minutes. Then, whisk in the mayonnaise, sour cream, and black pepper until smooth and sugar is dissolved.
- Fold the fresh chopped dill into the dressing mixture.
- Place the dried cucumbers, onions, and tomato wedges into a large chilled serving bowl. Pour the dressing over the vegetables and gently fold with a rubber spatula until evenly coated.
