Ingredients:

  • 2 oz (60 ml) Good Quality London Dry Gin
  • 75 oz (22.5 ml) Fresh Lime Juice
  • 5 oz (15 ml) Simple Syrup (1:1 ratio)
  • 3 thick slices Fresh Cucumber
  • Top-up Chilled Soda Water or Club Soda (approx. 2-3 oz)
  • 1 long, thin Cucumber Ribbon/Spear for Garnish
  • 1 Lime Wheel for Garnish

Instructions:

  1. Place the 3 thick cucumber slices into the base of a cocktail shaker.
  2. Gently muddle the cucumber slices just enough to release the juices without pulverising them into a paste.
  3. Pour the Gin, fresh Lime Juice, and Simple Syrup into the shaker over the muddled cucumber.
  4. Fill the shaker two-thirds full with good quality ice. Seal tightly and shake vigorously until the shaker is thoroughly frosted (about 15-20 seconds).
  5. Fill your serving glass (Highball or rocks glass) with fresh ice. Double strain the mixture (using both the shaker's strainer and a fine-mesh strainer) into the prepared glass to remove all cucumber fragments.
  6. Top the drink with chilled Soda Water. Gently stir once to incorporate the fizz. Garnish elegantly with the cucumber ribbon and a lime wheel. Serve immediately.
