Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1 cup (120g) cornmeal
  • 1 tablespoon (12g) baking powder
  • 1 teaspoon (6g) salt
  • ½ teaspoon (2g) black pepper
  • ½ teaspoon (2g) cayenne pepper (optional)
  • 1 large egg
  • ¾ cup (180ml) buttermilk
  • ½ cup (75g) finely chopped green onions (scallions)
  • ¼ cup (40g) finely diced bell pepper (optional)
  • Vegetable oil (for deep frying, approximately 3-4 cups)

Instructions:

  1. Heat vegetable oil in a deep pot to 350°F (175°C).
  2. In a large bowl, whisk together flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper (if using).
  3. In another bowl, whisk together the egg and buttermilk.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Fold in the green onions and bell pepper (if using).
  5. Cover the batter and refrigerate for 30 minutes.
  6. Using a spoon or scoop, drop batter into hot oil in small golf ball-sized balls. Fry in batches, ensuring not to overcrowd the pot. Cook for about 3-4 minutes, turning occasionally until golden brown.
  7. Remove hush puppies with a slotted spoon and drain on paper towels. Serve warm.
