Ingredients:
- 1 cup (120g) all-purpose flour
- 1 cup (120g) cornmeal
- 1 tablespoon (12g) baking powder
- 1 teaspoon (6g) salt
- ½ teaspoon (2g) black pepper
- ½ teaspoon (2g) cayenne pepper (optional)
- 1 large egg
- ¾ cup (180ml) buttermilk
- ½ cup (75g) finely chopped green onions (scallions)
- ¼ cup (40g) finely diced bell pepper (optional)
- Vegetable oil (for deep frying, approximately 3-4 cups)
Instructions:
- Heat vegetable oil in a deep pot to 350°F (175°C).
- In a large bowl, whisk together flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper (if using).
- In another bowl, whisk together the egg and buttermilk.
- Pour the wet ingredients into the dry ingredients. Stir until just combined. Fold in the green onions and bell pepper (if using).
- Cover the batter and refrigerate for 30 minutes.
- Using a spoon or scoop, drop batter into hot oil in small golf ball-sized balls. Fry in batches, ensuring not to overcrowd the pot. Cook for about 3-4 minutes, turning occasionally until golden brown.
- Remove hush puppies with a slotted spoon and drain on paper towels. Serve warm.
