Ingredients:

  • 1 cup (120g) cornmeal
  • 1 cup (120g) all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 small onion, finely chopped (about ½ cup)
  • 1 large egg, beaten
  • 1 cup (240ml) buttermilk
  • ½ cup (120ml) water
  • Vegetable oil (for frying)

Instructions:

  1. In a large mixing bowl, combine cornmeal, flour, baking powder, salt, and black pepper.
  2. Stir in the finely chopped onion until well distributed.
  3. In a separate bowl, whisk together the beaten egg, buttermilk, and water.
  4. Pour the wet mixture into the dry ingredients and stir until just combined (do not overmix).
  5. Cover the batter with plastic wrap and chill in the refrigerator for about 30 minutes.
  6. In a deep-fryer or pot, heat the vegetable oil to 350°F (175°C).
  7. Using a spoon or scoop, drop the batter into the hot oil, frying in batches until golden brown (about 5-7 minutes).
  8. Use a slotted spoon to remove and drain on paper towels.
