Ingredients:
- 1 cup (120g) cornmeal
- 1 cup (120g) all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 small onion, finely chopped (about ½ cup)
- 1 large egg, beaten
- 1 cup (240ml) buttermilk
- ½ cup (120ml) water
- Vegetable oil (for frying)
Instructions:
- In a large mixing bowl, combine cornmeal, flour, baking powder, salt, and black pepper.
- Stir in the finely chopped onion until well distributed.
- In a separate bowl, whisk together the beaten egg, buttermilk, and water.
- Pour the wet mixture into the dry ingredients and stir until just combined (do not overmix).
- Cover the batter with plastic wrap and chill in the refrigerator for about 30 minutes.
- In a deep-fryer or pot, heat the vegetable oil to 350°F (175°C).
- Using a spoon or scoop, drop the batter into the hot oil, frying in batches until golden brown (about 5-7 minutes).
- Use a slotted spoon to remove and drain on paper towels.
