Ingredients:

  • 1 large (450g) English Cucumber
  • 1/2 tsp (3g) flaky sea salt
  • 1/2 cup (125g) classic hummus
  • 1 tsp (5ml) fresh lemon juice
  • 2 tbsp (15g) toasted sesame seeds
  • 1 tbsp (10g) fresh parsley, finely chopped
  • 1 tbsp (15g) feta cheese, crumbled
  • 6 (30g) cherry tomatoes, quartered

Instructions:

  1. Wash the cucumber thoroughly and slice into rounds exactly 1/2 inch (1.25cm) thick.
  2. Arrange cucumber slices on a paper towel, sprinkle lightly with salt, and let sit for 2 minutes. Pat the tops firmly with a dry paper towel to remove excess surface moisture.
  3. In a small bowl, whisk the lemon juice into the hummus until smooth.
  4. Transfer the hummus mixture to a piping bag and pipe a generous, swirling mound onto the center of each cucumber slice, leaving a small border around the edge.
  5. Press one quarter of a cherry tomato into the center of the hummus.
  6. Sprinkle with toasted sesame seeds and a pinch of crumbled feta, then finish with a scatter of fresh parsley.
