Ingredients:
- 1 large (450g) English Cucumber
- 1/2 tsp (3g) flaky sea salt
- 1/2 cup (125g) classic hummus
- 1 tsp (5ml) fresh lemon juice
- 2 tbsp (15g) toasted sesame seeds
- 1 tbsp (10g) fresh parsley, finely chopped
- 1 tbsp (15g) feta cheese, crumbled
- 6 (30g) cherry tomatoes, quartered
Instructions:
- Wash the cucumber thoroughly and slice into rounds exactly 1/2 inch (1.25cm) thick.
- Arrange cucumber slices on a paper towel, sprinkle lightly with salt, and let sit for 2 minutes. Pat the tops firmly with a dry paper towel to remove excess surface moisture.
- In a small bowl, whisk the lemon juice into the hummus until smooth.
- Transfer the hummus mixture to a piping bag and pipe a generous, swirling mound onto the center of each cucumber slice, leaving a small border around the edge.
- Press one quarter of a cherry tomato into the center of the hummus.
- Sprinkle with toasted sesame seeds and a pinch of crumbled feta, then finish with a scatter of fresh parsley.
