Ingredients:
- 1 lb English cucumber, thinly sliced
- 1/2 cup red onion, thinly sliced into half-moons
- 1/4 cup fresh parsley, chopped
- 1 tsp kosher salt
- 1/3 cup apple cider vinegar
- 1 tbsp extra virgin olive oil
- 1 tsp honey
- 1/2 tsp black pepper
- 1/4 tsp crushed red pepper flakes
Instructions:
- Place sliced cucumbers in a colander and sprinkle with 1 tsp of kosher salt. Let them sit for 15–20 minutes to draw out excess moisture, then rinse quickly with cold water and pat dry.
- In a small bowl, whisk together the apple cider vinegar, olive oil, honey, black pepper, and crushed red pepper flakes until the oil is fully integrated into the vinegar.
- Combine the drained cucumbers and sliced onions in a large bowl. Pour the dressing over the top and toss gently with tongs.
- Fold in the fresh parsley, cover the bowl, and refrigerate for at least 30 minutes to allow the flavors to marry.
