Ingredients:

  • 1 lb English cucumber, thinly sliced
  • 1/2 cup red onion, thinly sliced into half-moons
  • 1/4 cup fresh parsley, chopped
  • 1 tsp kosher salt
  • 1/3 cup apple cider vinegar
  • 1 tbsp extra virgin olive oil
  • 1 tsp honey
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper flakes

Instructions:

  1. Place sliced cucumbers in a colander and sprinkle with 1 tsp of kosher salt. Let them sit for 15–20 minutes to draw out excess moisture, then rinse quickly with cold water and pat dry.
  2. In a small bowl, whisk together the apple cider vinegar, olive oil, honey, black pepper, and crushed red pepper flakes until the oil is fully integrated into the vinegar.
  3. Combine the drained cucumbers and sliced onions in a large bowl. Pour the dressing over the top and toss gently with tongs.
  4. Fold in the fresh parsley, cover the bowl, and refrigerate for at least 30 minutes to allow the flavors to marry.
